In fact, raw fish as a sushi ingredient only became popular in the late 19th century, thanks to the efforts of a Japanese chef named Hanaya Yohei. He is credited with inventing nigiri sushi, where a slice of raw fish is placed on a mound of sushi rice. Today, sushi has become a global phenomenon, with variations and adaptations found all over the world. However, it is important to remember the humble origins of this beloved dish and the centuries of tradition that have shaped it into what we know today.
